A frozen food is provided that requires neither addition of water nor large cookware such as a pot, an electromagnetic cooker and a gas stove; is easy to eat; can be stored for a long period; does not cause loosening and uneven heating of the noodle; and makes it possible to enjoy an aromatic and authentic taste in a simple manner only by heating in a microwave oven. It was found that a plurality of chunks of frozen soup having a specific size are placed at a higher position with respect to a frozen noodle, so that a frozen food that makes it possible to enjoy an authentic taste as a hot noodle simply by microwave cooking can be provided, and these findings have led to the present invention.

Method for producing fried noodles
[Problem to be Solved] The present invention provides a method for producing fried noodles having a reduced sodium content and excellent noodle making properties, texture, and flavor. [Solution] Fresh noodles having excellent noodle making properties, texture, and flavor can be produced not by adding salt but by adding 1 to 3% by weight of potassium lactate relative to a main raw material powder such as wheat flour. Further, fried noodles having a reduced sodium content and excellent texture and flavor can be produced by steaming the fresh noodles and fry drying.
RAW CHINESE NOODLES, METHOD FOR PRODUCING THE SAME, METHOD FOR SUPPRESSING STORAGE ODOR OF RAW CHINESE NOODLES, AND AGENT FOR SUPPRESSING STORAGE ODOR OF RAW CHINESE NOODLES
An object of the present invention is to provide raw Chinese noodles in which a storage odor generated in long-term storage at ordinary temperature or in refrigeration is suppressed. This object is achieved by raw Chinese noodles containing sodium tartrate and sodium citrate. The raw Chinese noodles can be produced by adding kneading water having sodium tartrate and sodium citrate and kansui dissolved therein to a main raw material powder, followed by kneading with a mixer to produce a noodle dough, and then subjecting the noodle dough to noodle making. A weight ratio between the sodium tartrate and the sodium citrate contained in the raw Chinese noodles is preferably 1:3 to 3:1, and a content thereof is preferably 2 to 30 g per kg of the main raw material powder.
SHELF-STABLE, READY-TO-EAT PASTA PRODUCTS AND METHODS OF PRODUCING SAME
Methods of producing ready-to-eat pasta that has improved taste, texture, and color are disclosed. The methods include blanching pasta in acidified water, draining, cooling, and packaging the pasta, and thermally processing the packaged pasta. Also disclosed are products containing ready-to-eat pasta sealed in a container, wherein the pasta has a pH above about 4.5, and wherein the container is substantially free of added liquid.
MICROWAVABLE FROZEN STEAMED DUMPLINGS AND METHODS THEREOF
A microwavable frozen steamed dumpling including a noodle-strip food and a batter, the batter containing water in an amount of at least 70 wt. %, based on a total weight of the batter, thereby enabling microwaving from a frozen state to provide cooked steamed dumplings with excellent mouthfeel, textural properties, and appearance. Also provided is a method of making the microwavable frozen steamed dumpling whereby the noodle-strip food is contacted with the batter and subsequently frozen to form the microwavable frozen steamed dumpling, and a method of preparing a cooked steamed dumpling whereby the microwavable frozen steamed dumpling is heated in a microwave oven.
VEGETABLE NOODLES AND METHODS FOR MAKING THE SAME
The present disclosure features dried vegetable noodles having an increased shelf life and methods of making dehydrated vegetable noodles. The noodles are dry, shelf stable cut vegetable noodles (cut from whole produce, not extruded) and are lower in carbohydrate calories and higher in nutritional value than traditional grain-based noodles. The process results in a food safe, extended shelf stable singularized noodle that is nutritious, convenient and versatile.

An object of the present invention is to provide instant fried noodles having a lower fat or oil content than general instant fried noodles.
[Solution]
Instant fried noodles having a porous structure including a smaller number of pores and having a lower porosity are provided by inhibiting formation of a layered gluten network structure within noodle strings. Thus, a fat or oil content of the fried noodles can be lowered.
