The present invention provides starch film-forming compositions and methods of their use for preparing capsule shells. The starch film-forming composition includes a gellan gum and at least one starch, wherein the total acyl content of the gellan gum ranges from 14 to 34%. The starch film-forming composition of the present invention has the advantages of desired film-forming strength and toughness, which can be applied in soft capsules to obtain soft capsules with a desired adhesive property upon formation and encapsulation property and which is free of animal-derived ingredients. The soft capsules thus are suitable for all ethnic populations in the world and can be applied globally.

The present disclosure belongs to the technical field of starch processing, and in particular relates to slowly digestible starch (SDS) and a preparation method and use thereof. The SDS includes a starch granule and a non-starch polysaccharide coating coated on a surface of the starch granule. In the present disclosure, the non-starch polysaccharide coating coated on the surface of the starch granule can prevent an amylase from contacting the starch granule, increasing contents of the SDS and resistant starch (RS) in the SDS. Therefore, the SDS can delay a digestion process, increase a digestion time of the starch, and reduce the increase of blood glucose and insulin levels after the starch is digested and absorbed.

The starch-based coatings comprise both a polymerized starch, comprising intertwined amylopectin chains and/or amylose chains, and native (unmodified) and/or modified starch granules dispersed in a liquid carrier. When the starch granules are heated to a temperature to induce swelling, the swollen starch granules become embedded in the intertwined amylopectin and/or amylose chains, improving physical properties of the coating needed to extend shelf-life of food products.
