PRECISION CONTROL AND CHARACTERIZATION OF DISPENSED SUBSTANCES
Method for dispensing a recipe includes measuring characterization data for components of a recipe. A signal representing an instruction to dispense the recipe is received at a processor operably coupled to a dispenser. In response to receiving the signal representing the instruction to dispense, an instruction set is generated based on the recipe and the characterization data. The instruction set is executed, to cause a series of delivery events of the components. Prior to each individual delivery event comprising the instruction set, a deviation, from their predetermined setpoints, is detected in a temperature and/or a pressure of the microfluidic dispenser. In response to detecting the deviation in temperature and/or pressure, the processor automatically causes an adjustment to one or more instructions from the instruction set based on the detected variation such that the amount of each component delivered more closely conforms to the amount specified in the recipe.

The present application discloses an automated restaurant comprising: a kitchen; a customer-tracking area comprising a dining area; and a plurality of vehicles. The kitchen comprises a storage apparatus to store ingredient containers, a transfer apparatus to move ingredient containers, and one or more cooking stations. Each vehicle is configured to move one or more food containers from cooking stations to dining tables. A tracking system comprises cameras, lidars, etc., which are fixedly mounted. The tracking system can dynamically map out the fixtures, humans and vehicles in the restaurant. Information from the tracking system is used to control the motion of the vehicles. The tracking system can dynamically track the positions of customers in the customer-tracking area, so that foods ordered by specific customers may be automatically sent by vehicles to the customers' locations.

The kitchen appliance includes: a heater for heating fluid; a first temperature sensor for sensing a temperature of a food item contained in a sous vide bag within the fluid; a second temperature sensor for sensing a temperature of the fluid; and a controller, operatively connected to the heater and in communication with the temperature sensors, wherein the controller comprises a memory and a processor configured to: receive, from the first temperature sensor, one or more first temperature samples indicative of a temperature of the food item; receive, from the second temperature sensor, one or more second temperature samples indicative of a fluid temperature; control operation of the heater according to the one or more second temperature samples and a target cooking temperature; and store, in memory in a non-volatile manner, the one or more first temperature samples.
