Disclosed is an outdoor cooking appliance with ductwork that directs heat and smoke more evenly in the cook chamber of the appliance. For example, the ductwork can extend from the heat source of the appliance and direct the smoke to openings in rack holders that then dispel the smoke into the cook chamber more evenly. The burn pot assembly can also be segregated from the grease pan to avoid the potential for grease fires.

Drum smoking assembly

A drum smoking assembly is configured to utilize uniform, cyclonic circulation flow of air, heat and smoke for smoking and cooking food. The drum smoking assembly has a drum smoker that is approximately cylindrical and further comprises interior and exterior surfaces. Two side openings extend through the interior and exterior surfaces which are joined to air intakes tangentially connected to the exterior surface. A basket is arranged within the drum smoker above the first side opening and the second side opening. A twelve vane straightening perforate plate is arranged within the drum smoker above the basket. A lid is rotationally connected to the drum smoker and further comprising a chimney cap. A heat source in the basket pulls air through the first air intake and the second air intake that is then pushed through the twelve vane straightening perforate plate toward the chimney cap, creating a cyclonic air flow.

Removable ash clean out assembly

The burn pot can include a handle that a user can pull to remove the burn pot from an adapter collar located within the interior of the appliance. The user can then clean the interior of the appliance and thereafter insert the burn pot into the appliance. For example, the user can push the burn pot by guiding a lower plate of the burn pot along a lip of the appliance and into a landing area where a body of the burn pot can rest on the adapter collar. The burn pot can also form a flow channel around the burn pot body to provide improved airflow during the cooking process.

In at least some implementations, embodiments of the present disclosure include one or more of a cooking vessel, a fuel cartridge of combustible fuel (e.g., wood, charcoal) that is positionable within the cooking device, and a control device that includes or controls the operation of a fan, which in turn precisely controls the combustion of the fuel and the conditions within the cooking vessel. The fan may be operative to push or pull air through the fuel cartridge. When the fan is turned off or at low speed, the combustion gases from the fuel cartridge may be vented directly to the ambient environment without passing through the cooking vessel. The cooking vessel and fuel cartridge may be made from materials that are disposable, and ideally recyclable and/or compostable.

The grill may also include a pan that may be located in the housing interior, a cooking grate that may be located above the pan, and a removable lid that may be located above the cooking grate. The pan may sit on one or more removable rods.

Gravity fed smoker

A gravity fed smoker includes a smoking enclosure and an external stack. The stack is double walled with an inner wall, and an outer wall. A vented cooling space exists between the inner wall and the outer wall. An inner chamber of the external stack includes a fire box with a fire grate and a feed hopper positioned above the fire box. A smoke tunnel with a series of openings for releasing smoke into the smoking enclosure extends along the bottom of the food smoking enclosure and is connected to the external fire box at one end. Fuel, including charcoal, lump coal, or wood pellets, is loaded into the feed hopper. As the fuel burns on the fire grate and turns to ashes, the fuel is fed from the hopper onto the fire grate by gravity. A fan and dampers controls air flow through the fire grate and into the smoke tunnel.
