Swelling of starch suspensions

A methodology useful for predicting the texture of a heated starch suspension by predicting the storage modulus (G′) of the starch suspension resulting from starch granule swelling during heating has been developed. The methodology is based on the physical properties of the starch granules in the starch suspension and the temperature history of the heated starch suspension.

Disclosed in the present invention are a starch-embedded aroma substance microcapsule and a preparation method therefor. The method comprises: performing degreasing treatment on starch, gelatinizing the starch at high temperature, sequentially adding aroma substances having different molecular sizes into the starch paste, and compounding at high temperature; and finally, cooling, centrifuging, washing, and drying to obtain an aroma substance microcapsule. The total embedding rate of the aroma substances in the obtained microcapsule can reach 46.64%. The present invention is simple and convenient in process, and easy in condition control, does not need large special equipment, and has low cost and high efficiency.

A novel dry mill process for producing pure starch, which can be used as a feed stock for bio tech processes. Corn feedstock is sent through a particle size reduction device, such as a hammer mill, to produce corn flour. The corn flour is screened into a small particle portion (which mainly contains “free” starch from the floury endosperm) and a larger particle portion (which mainly comprises the horny endosperm, germ pericarp and tip cap). The small particle potion is sent to a liquefication and a saccharification process to produce high Be corn syrup. A mud phase (mixture of oil, germ, and any light solid) is centrifuged. The light phase is sent to precoat drum filtration to produce clean corn syrup. Further, a novel wet mill process to produce starch and alcohol is disclosed. A three-section paddle screen can be used to separate starch from grit and fiber.

This invention disclosure relates to novel maize starch. The starch can be made from the newly developed waxy sugary-2 double-mutant maize that has low activity of Granule Bound Starch Synthase I (GBSSI), which results in low amylose level. The starch from newly developed waxy sugary-2 double-mutant is freeze-thaw stable and has high viscosity. In comparison with the starch of the existing waxy sugary-2 double-mutant maize, the new waxy sugary-2 double-mutant maize starch showed, inter alia, improved pasting profile, starch granule integrity, larger starch granule size, and higher viscosity.
