An object of the present invention is to provide a technique of suppressing precipitation of an anthocyanin pigment in a range other than the highly acidic range. The present invention provides an anthocyanin pigment preparation, comprising: an anthocyanin pigment; and an emulsifier, wherein the pH when the anthocyanin pigment preparation is diluted with water or dissolved in water so that a color value becomes 10 is more than 3.
METHOD FOR SUPPRESSING FOAMING OF NATURALLY DERIVED WATER-SOLUBLE PIGMENT
Foaming that occurs when a naturally derived water-soluble pigment, such as spirulina blue, an anthocyanin-based pigment, a gardenia pigment, or a monascus pigment, is added to an aqueous solvent, such as water, and dissolved is suppressed. A solid composition containing a naturally derived water-soluble pigment is subjected to a compression treatment to suppress foaming.

The photonic crystals can be fabricated by assembling the plurality of substantially uniform zein particles into one or more ordered and periodic structures that generate structural color.
