METHOD FOR IMPROVING THE TECHNOLOGICAL AND NUTRITIONAL PROPERTIES OF GLUTEN-FREE FOOD MATRICES
A method is provided for improving the technological and nutritional properties of gluten-free food matrices based on a fermentation protocol using selected lactic bacteria as starters. The bacteria used are Lactobacillus plantarum strain DSM 33412 and Lactobacillus brevis strain DSM 33413. The method is useful in the processing of gluten-free flowing food material.

The present invention relates to two new strains of lactic acid bacteria, Lactobacillus brevis DSM 33325 and Lactobacillus plantarum DSM 33326, to a new food composition, and to the process for the preparation thereof.
METHOD FOR PRODUCING FERMENTED GREEN COFFEE BEANS BY COMPLEX FERMENTATION AND FERMENTED GREEN COFFEE BEANS PRODUCED THEREBY
The present disclosure relates to a method for producing fermented green coffee beans and fermented green coffee beans produced thereby, the method including: (A) a step of freezing green coffee beans at −10 to −25° C.; (B) a step of immersing the frozen green coffee beans in water for 3 to 10 hours; (C) a step of taking out the green coffee beans immersed in the water, removing the water and leaving the beans to stand for 5 to 15 hours while supplying air at 20 to 30° C.; (D) a step of sterilizing the green coffee beans and then inoculating the same with a strain to anaerobically ferment the same; and (E) a step of sterilizing and then drying the anaerobically fermented green coffee beans. When the fermented green coffee beans are roasted into coffee beans, aroma and taste may be improved and odor may be removed.
Gene expression cassette and expression vector including the same
The present invention relates to a gene expression cassette including a strong promoter derived from lactic acid bacteria, and a gene expression vector including the same. According to the present invention, a large amount of a human protein, the physiological activity of which has been verified, may be stably produced with high efficiency by introducing a useful foreign gene into an expression vector and transforming probiotics with the expression vector. Through the production of this protein, it is possible to provide a basis for developing functional probiotics and making products using them.
Use of the treatment or improvement of sleep disorders by <i>Lactobacillus brevis </i>ProGA28 and/or its metabolites
The present invention relates to the use of a novel Lactobacillus brevis ProGA28 strain, deposited in the German Collection for Microorganisms and Cell Cultures (DSMZ) under the accession number DSM 33167 on May 28, 2019. The metabolites of Lactobacillus brevis ProGA28 have the ability to improve sleep quality, can effectively reduce the time of rapid eye movement in the sleep phase, can reduce time to fall asleep, can increase total sleep time, and can increase the ratio of low waves during sleep so that sleep disorders and related complications, such as anxiety and immune system diseases, are treated.
