The present disclosure provides a novel and gentle process for producing oat-based products containing oat proteins that have good functional properties, including solubility, emulsifying, foaming and gelling properties. This process includes hydrolysis to break down carbohydrates, physical separation to remove insoluble fibers, and membrane filtration to concentrate oat proteins by the removal of sugars. The method can include providing an oat mixture; hydrolyzing the oat mixture with an enzyme or a combination of enzymes; physically separating an insoluble material from the hydrolyzed oat mixture to form a soluble hydrolyzed oat mixture; applying membrane filtration to the soluble hydrolyzed oat mixture using a membrane having molecular weight cut-offs (MWCO) greater than 100 kDa.

The present invention relates to a process for forming a functionalised dietary fibre comprising admixing an enzyme and an aqueous suspension of dietary fibre, wherein said dietary fibre is at a D.sub.50 particle size distribution of less than 30 microns after degradation by the enzyme and comprises less than 25 wt. % soluble fibres and at least 40% wt. % cellulose; denaturing said enzyme to form a functionalised, amphiphilic dietary fibre with adsorbed enzyme. The present invention further relates to a Pickering particle comprising a functionalised dietary fibre and denatured enzyme and the use of the functionalised dietary fibre and denatured enzyme according to present invention or the Pickering particle according to the present invention to stabilize an emulsion.

Disclosed embodiments concern a composition and/or combination, and a method of administering the same as a feed, or to supplement the feed of, aquatic animals, particularly for aquaculture. Disclosed composition and/or combination embodiments may comprise glucan, silica, mineral clay, mannans, yucca, quillaja, a probiotic, and/or an adhesive agent. The adhesive agent may be selected particularly to facilitate administration to aquatic species. In certain embodiments the adhesive agent comprises an oil, such as soy oil, or a syrup, such as molasses, or combinations thereof. In some embodiments the composition and/or combination may further comprise polyphenol, an antimicrobial, and/or a vaccine. Detecting Xanthan Gum
Detecting xanthan gum in a sampling location includes delivering a tagged polypeptide to the sampling location. The tagged polypeptide includes a polypeptide and a fluorescent probe bound to the polypeptide, such that the fluorescent probe is released from the polypeptide to yield an unbound fluorescent probe when the polypeptide interacts with xanthan gum. Light that excites the unbound fluorescent probe is directed toward the sampling location, and an intensity of fluorescence emitted from the unbound fluorescent probe is assessed, wherein a non-zero intensity is indicative of the presence of xanthan gum in the sampling location. A device for the detection of xanthan gum has a sensing region including the tagged polypeptide, a light source adapted to direct light to the sensing region, the light source adapted to provide one or more wavelengths of light to excite the fluorescent probe, and a detector for detecting fluorescence emitted from the fluorescent probe.
