Sterile filtered lactase preparation comprising salt with monovalent cation
11576393 · 2023-02-14 · ·

The present invention relates to a sterile-filtered liquid lactase preparation and to a method of sterile filtering a liquid lactase preparation. At least 0.01% w/w of at least one salt having a monovalent cation is added in order to improve filterability. The system may further comprise a polyol stabilizer.

Enzyme preparations yielding a clean taste

The present invention describes a intracellular produced lactase, which comprises less than 40 units arylsulfatase activity per NLU of lactase activity. The invention also provides a process comprising treating a substrate with an enzyme preparation, wherein the enzyme preparation is substantially free from arylsulfatase.

PEANUT MILK PRODUCT WITH SUPERIOR PEANUT TASTE, AROMA AND TO IMPROVE GUT MICROBIOTA AND PREPARATION PROCESS AND USE THEREOF

Disclosed herein is a process for producing a peanut milk product, which includes subjecting a milk material to a hydrolysis reaction with lactase and transglucosidase to obtain a milk product, immersing peanut kernels in water to obtain swelled peanut kernels, subjecting the swelled peanut kernels to a steam cooking treatment to obtain steamed peanut kernels, and admixing the milk product with the steamed peanut kernels, followed by subjecting a mixture thus obtained to a heating treatment, so as to obtain the peanut milk product. A method for improving gut health using the peanut milk product and a canned food containing the peanut milk product are also disclosed.

Lactase bulk powder and lactase preparation

A lactase bulk powder and a lactase preparation both have improved storage stability. The stability of a lactase bulk powder is improved by regulating the acceptable amount of glucose and/or galactose, generated during manufacturing the lactase bulk powder, within a preset range. The lactase bulk powder includes lactase, galactose and/or glucose. The total amount of galactose and glucose is more than 0 μmol and not more than 50 μmol per 100,000 U of lactase. The lactase preparation has the lactase bulk powder as an active ingredient.

USE OF LACTASE TO PROVIDE HIGH GOS FIBER LEVEL AND LOW LACTOSE LEVEL

A method for providing a low lactose milk-based product having GOS fiber is provided in which a milk substrate having lactose is treated with a transgalactosylating enzyme to provide GOS fiber and remaining lactose; deactivating the transgalactosylating enzyme; contacting the milk-based substrate having GOS fiber with a lactase to degrade the remaining lactose to provide the low lactose milk-based product having GOS fiber and deactivating the lactase. Also provided are enzymes and GOS fiber and lactose amounts and stability.

LACTASE SOLUTION AND DAIRY PRODUCT USING SAME

[Problem] To provide a lactase solution having excellent thermal stability.

[Solution] A lactase solution in which the ratio of a lactase fraction having a molecular weight of about 120 kDa measured by SDS polyacrylamide gel electrophoresis is 20% or more.

A method for producing a lactase-containing composition which is purified by selectively removing protease contaminating the lactase using simple and easy means; a lactase-containing composition; and a dairy product containing the lactase-containing composition. A method for producing a lactase-containing composition having a reduced protease content includes: dissolving a composition containing lactase and protease in an aqueous salt solution having an electric conductivity of from 2 to 45 mS/cm; bringing the resultant solution into contact with an ion exchange resin; and collecting a fraction which is not adsorbed onto the ion exchange resin.
