A stacked continuous vacuum pan (SCVP) system and method may be provided wherein the SCVP includes at least three modules mounted on separate floors in a stacked formation. Each module includes a horizontal shell and a vertical calandria mounted along the horizontal shell. The calandria may be a honeycomb or swarm calandria. The SCVP system may operate as a single unit while allowing an individual module to be taken offline without disrupting use of the SCVP system.

A system composed of heating and vacuum elements for the purpose of removing water vapor from molasses or other high sugar concentrate substances. Alternatively, the system could be used to remove water vapor from any substance where water removal is desired. Typically, the system starts with a molasses or high sugar concentrate with a moisture content of up to 40 percent. After processing, the system produces a high sugar concentrate with a moisture content of less than 5 percent. The system uses a continuous flow vacuum evaporated process. In an alternative embodiment, a method of operating the system is also disclosed.

A cylindrical frame is fabricated to provide for a tray and heating system that facilitates the condensing of liquid through the process of evaporation. In exemplary embodiments, the barrel evaporator provides a suitable heating system to allow for evaporation at a rate at or above 4 gallons per hour on a tray that has approximately 600 square inches of surface area. In exemplary embodiments, the barrel evaporator has a removable tray that can be replaced by grill grates to allow for uses other than evaporating liquids.
